Summer is synonymous with outdoor gatherings and barbecues, where grilled food becomes the centrepiece of the meal. Interest in high-protein dietary strategies, including the Protein-Sparing Modified Fast (PSMF), low-carbohydrate plans, and carnivore-style eating patterns, has grown alongside.
These approaches are commonly adopted to improve satiety, support body composition goals and simplify meal planning. Much of the attention goes to the choice of protein, yet the choice of cooking fat matters just as much, particularly when foods are prepared over high heat. Palm oil is well suited to this role. Its naturally balanced fatty acid profile gives it excellent oxidative stability on the grill, while red palm oil adds naturally occurring carotenoids, including β-carotene and α-carotene, to meals that might contain very few.
Summer BBQ cooking typically involves grilling steaks, burgers, lamb chops, chicken and seafood at elevated temperatures. Cooking oils differ considerably in how well they withstand prolonged heat, and this affects both cooking performance and nutritional quality. Oils high in polyunsaturated fatty acids degrade comparatively quickly under sustained heat, producing oxidation by-products that can affect flavour and quality. Palm oil behaves differently. It contains an almost equal balance of saturated and unsaturated fatty acids, with oleic acid, the same monounsaturated fat that predominates in olive oil, as its principal unsaturated component, and a comparatively low polyunsaturated content. That composition is precisely why palm oil holds its structure so reliably during grilling, roasting, pan-searing and why it remains a dependable choice for meat-based meals cooked at high temperature.
There is a further benefit that is easy to overlook. Palm oil is semi-solid at room temperature in its natural state, so it delivers the texture and stability that food preparation often requires without any need for hydrogenation. It is therefore naturally free of industrial trans fats, and it comes from a non-genetically modified crop. For clients who read labels carefully, and increasingly they do, that is a meaningful point in its flavour.
These considerations are particularly relevant for people following higher-protein dietary approaches, where grilled meat frequently forms the basis of the meal. The rising popularity of PSMF and carnivore-style patterns has shifted attention beyond protein intake towards the practicalities of preparation. PSMF is designed primarily to preserve lean body mass during calorie restriction by emphasising high-quality protein while substantially restricting carbohydrate and dietary fat. Carnivore-style diets, by contrast, focus predominantly on animal-derived foods, although many people follow a more flexible version that includes selected plant-derived ingredients. Whichever strategy is adopted, grilling and barbecue cooking remain among the most common preparation methods, particularly through the summer months. Choosing a cooking oil that tolerates high temperatures while complementing meat-based meals therefore becomes an important culinary decision.
Beyond its performance in the pan, red palm oil brings nutritional value of its own. Unlike refined palm oil, it retains the carotenoids, tocopherols and tocotrienols naturally present in the palm fruit, all of which have antioxidant properties. It is among the richest natural plant sources of provitamin A carotenoids, containing considerably more per gram than familiar sources such as carrots and tomatoes. β-Carotene functions as a provitamin A carotenoid and contributes to normal vision, immune function, epithelial integrity and healthy skin. Palm oil is one of the few substantial dietary sources of a less common form of vitamin E that has attached sustained research interest for antioxidant activity distinct from that of the more familiar tocopherols.
Because carotenoids and vitamin E are fat-soluble, they are absorbed far more efficiently when consumed within a fat-containing meal. Red palm oil therefore supplies both the nutrients and the vehicle that helps the body take them up, which is an unusually efficient combination. For anyone following a flexible carnivore or lower-carbohydrate pattern, where the range of naturally coloured plant foods is narrow by design, incorporating red palm oil into grilled meals offers a source of carotenoids without adding carbohydrate. Other compatible foods that naturally contain carotenoids include egg yolks and salmon, while mixed low-carbohydrate approaches may also accommodate vegetables such as red peppers.
In my clinical practice in Egypt, I have observed that the summer season consistently encourages higher-protein eating habits. Family gatherings and social events revolve around barbecue meals, and grilled meat is the centrepiece of many occasions. Rather than discouraging these traditions, I encourage clients to improve the nutritional quality of their meals by selecting appropriate ingredients, using better cooking methods and maintaining balanced portion sizes. This practical approach tends to produce far greater long-term adherence than asking people to give up culturally important eating occasions altogether.
My clinical experience in the United Arab Emirates points the same way. Working with clients from Arab, South Asian, European and African backgrounds, I have seen higher-protein approaches become steadily more popular among those seeking fat loss, metabolic health and body recomposition. Under professional supervision, PSMF protocols, structured low-carbohydrate plans and flexible carnivore-style diets are now widely implemented. One observation holds consistently across all of them: clients adhere far better when nutritional advice works alongside local food culture rather than attempting to replace it.
During barbecue gatherings, recommending a heat-stable cooking oil such as palm oil alongside lean protein choices allows clients to enjoy familiar meals without compromising the objectives of their nutrition plans. These observations reflect clinical practice and should be interpreted as professional experience rather than controlled scientific evidence.
Although protein remains the principal nutritional focus of PSMF and other high-protein strategies, overall dietary quality should not be overlooked. As consumers take a closer look in nutrition, the conversation needs to move beyond judging individual ingredients in isolation. Palm oil is a natural vegetable oil, minimally processed in its red form, that has been part of everyday cooking across Africa and Asia for generations. It earns its place in balanced diets and in high-temperature cooking on the strength of what it does. The healthier choice ultimately depends on the overall dietary pattern, not one ingredient on a label.
As interest in high-protein nutrition continues to grow across the Middle East, healthcare professionals should offer recommendations that reflect both scientific evidence and the way people actually eat. Palm oil answers both tests. It offers reliable performance at the temperatures barbecue cooking demands, and in its red palm oil form it contributes β-carotene, tocotrienols and other antioxidant compounds that complement protein-rich meals. Incorporated appropriately into well-designed nutritional strategies, including supervised PSMF, flexible carnivore-style diets and other high-protein approaches, palm oil supports both the cooking and the enjoyment of a good summer meal.
